Description

A comforting taco casserole that combines seasoned ground beef, beans, and cheese over a bed of tortilla chips.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 3 cups crushed tortilla chips
  • Optional toppings: sour cream, sliced green onions, jalapeños, diced tomatoes

Instructions

  1. Start by preheating your oven to 350°F (175°C). While the oven is warming up, grease a 9×13 inch baking dish to prevent any sticking and ease cleanup later on.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is nicely browned and the onion becomes soft.
  3. Once your beef is cooked through, stir in the packet of taco seasoning and pour in the 1/2 cup of water. Let it simmer and thicken.
  4. Next, mix in the rinsed and drained black beans, corn kernels, and salsa. Stir everything together carefully.
  5. Begin layering by spreading half of the crushed tortilla chips into the prepped baking dish. Spoon the beef and veggie mixture over the layers, then sprinkle 1 cup of shredded cheese over this first layer.
  6. Repeat the layers with the remaining components: another layer of tortilla chips, the rest of the beef mixture, and end with the remaining cheese on top.
  7. Bake your taco bake for approximately 20–25 minutes until the cheese on top is fully melted and bubbly.

Notes

Adjust spices to personal taste and feel free to use healthier meat alternatives.
