- ½ cup panko breadcrumbs (or gluten-free breadcrumbs)
- 2 tbsp Thai red curry paste
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp fish sauce
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 egg, beaten
- ¼ cup fresh cilantro, chopped
- 1 tbsp lime juice
- 1 tbsp coconut milk (optional, adds extra moisture)
- Sliced green onions, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine all your ingredients for the meatballs: ground chicken, panko breadcrumbs, Thai red curry paste, minced garlic, grated ginger, fish sauce, soy sauce, beaten egg, chopped cilantro, lime juice, and coconut milk.
- Shape the mixture into 1-inch meatballs and arrange them on a baking sheet.
- Bake the meatballs for about 18–20 minutes until golden brown and cooked through.
- While baking, prepare the peanut dipping sauce by whisking peanut butter, soy sauce, lime juice, honey, and Thai red curry paste with warm water to your desired consistency.
- Once baked, garnish meatballs with sliced green onions and serve with the peanut dipping sauce.
