  • ½ cup panko breadcrumbs (or gluten-free breadcrumbs)
  • 2 tbsp Thai red curry paste
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 egg, beaten
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp lime juice
  • 1 tbsp coconut milk (optional, adds extra moisture)
  • Sliced green onions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine all your ingredients for the meatballs: ground chicken, panko breadcrumbs, Thai red curry paste, minced garlic, grated ginger, fish sauce, soy sauce, beaten egg, chopped cilantro, lime juice, and coconut milk.
  3. Shape the mixture into 1-inch meatballs and arrange them on a baking sheet.
  4. Bake the meatballs for about 18–20 minutes until golden brown and cooked through.
  5. While baking, prepare the peanut dipping sauce by whisking peanut butter, soy sauce, lime juice, honey, and Thai red curry paste with warm water to your desired consistency.
  6. Once baked, garnish meatballs with sliced green onions and serve with the peanut dipping sauce.
