Delightful Christmas Smoked Salmon & Cucumber Bites are not only festive and flavorful but also incredibly easy to make.

- ¾ cup full-fat cream cheese, softened
- 2 tablespoons thick Greek yogurt
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 1 tablespoon minced fresh dill
- 1 small garlic clove, finely grated
- Pinch of sea salt
- 3 mini cucumbers, sliced into ¼-inch rounds
- 5 oz cold-smoked salmon, cut into strips
- Fresh dill sprigs (for garnish)
- Cracked black pepper (for garnish)
Instructions
- Start by combining the softened cream cheese and thick Greek yogurt in a mixing bowl. Using a hand mixer or a spatula, blend the two until the mixture is creamy and smooth. Add in the lemon juice, zest, minced dill, grated garlic, and a pinch of sea salt. Mix thoroughly until all ingredients are well combined.
- To make the application of the cream cheese easier and more aesthetic, transfer the blended cream cheese mixture into a piping bag.
- Take your mini cucumbers and slice them into even rounds, about ¼ inch thick. Aim for uniformity in size so that each piece presents nicely.
- Next, take your strips of cold-smoked salmon and roll them into spirals. Place one spiral on each cucumber slice.
- Using your prepared piping bag, gently pipe a swirl of the dill cream cheese mixture over each salmon piece.
- To finish, garnish each cucumber bite with a sprig of fresh dill and a sprinkle of cracked black pepper.
Notes
These bites are best enjoyed fresh, but they can be stored in the fridge for up to 2 days.
