Instructions

  1. Start by seasoning the cod fillets generously on both sides with salt and pepper. This helps to enhance the natural flavor of the fish, making it more delectable when cooked. Set the seasoned fillets aside for a few minutes to allow the seasoning to penetrate the fish.
  2. In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking. Sear the cod for about four minutes on one side until it turns a lovely golden brown, then gently flip it to the other side using a spatula.   4. Return the cooked cod fillets to the skillet, spooning some of the lemon-caper sauce over them. Let them simmer gently in the sauce for an additional two to three minutes until fully cooked and warmed through. Finally, remove the skillet from the heat, and add the unsalted butter to the sauce, swirling gently until it melts and the sauce becomes smooth and glossy.
