  • 1 tsp chopped rosemary
  • 1 tsp chopped thyme
  • 1/2 tsp smoked paprika (rub)
  • 1/2 tsp garlic powder (rub)
  • 1/4 tsp salt (rub)
  • 1/4 tsp black pepper (rub)
  • 2 tbsp melted butter
  • 1 tbsp chopped fresh herbs (parsley, rosemary, thyme)
  • 1 tbsp olive oil (for optional sear)
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp butter (for glaze)

Instructions

  1. Start by preheating your oven to 400°F (200°C). Next, take your turkey breast and pound it out to a thickness of about ¼ inch. This ensures that it rolls easily and cooks evenly. Lay the turkey flat on a cutting board and make sure it is evenly pounded. Once this is done, prepare a small roasting dish by greasing it lightly to prevent sticking.
  2. In a medium bowl, combine the softened cream cheese with the chopped spinach, minced garlic, crispy bacon pieces, dried cranberries, and seasonings including salt, black pepper, rosemary, thyme, and parsley. Mix everything together until well blended, and spread this mixture evenly over the turkey breast, leaving about a half-inch border around the edges. This will provide the room you need when rolling the turkey.
  3. Now it’s time to add the brie slices on top of the filling. Make sure they are layered evenly for a delightful surprise in every slice. Roll the turkey tightly starting from one end, ensuring the filling stays inside.
