  • 200g feta cheese, cut into cubes
  • 20 Kalamata olives, pitted
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, finely chopped
  • Fresh parsley sprigs, for garnish
  • Crushed black pepper, to taste
  • Flaky sea salt, to taste (optional)
  • Wooden toothpicks or small skewers

Instructions

  1. Start by slicing the cucumber into thick, even rounds. Aim for a thickness that can comfortably support the toppings without breaking apart; about half an inch works well. Once sliced, lay the rounds on a clean surface or a plate, taking care to keep them from overlapping to maintain their shape and ease of assembly.
  2. In a small bowl, combine the feta cheese cubes with the extra virgin olive oil, finely chopped parsley, and dried oregano. Gently toss the ingredients together, making sure that the feta cubes are lightly coated with the oil and herbs. This marination step adds flavor to the cheese, enhancing every bite with fragrant Mediterranean flavors. The olive oil not only helps to meld the flavors but also adds a touch of richness.
  3. Now for the fun part! Take one of the thick cucumber slices and place a piece of marinated feta cheese on top. Follow this by adding one Kalamata olive atop the feta. The combination of textures and flavors will be delightful! Once the ingredients are stacked, secure them in place by poking a wooden toothpick or small skewer through the center. Repeat this process for each cucumber slice until all ingredients are used up. The preparation of these skewers is simple and can even be done ahead of time, which is great for hosting.
  4. Arrange your assembled skewers neatly on the long white rectangular serving plate. Drizzle a little more olive oil across the skewers for added richness, and finish with a sprinkle of crushed black pepper and flaky sea salt if desired. This not only brings out the flavors but also visually enhances the presentation. Lastly, add sprigs of fresh parsley around the plate as a garnish to elevate the visual appeal even further.
