Ingredients

  • 3 medium beets, peeled and sliced into ¼-inch rounds
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 4 oz soft blue cheese or Gorgonzola
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp fresh lemon juice
  • ⅓ cup chopped toasted walnuts
  • 1 tbsp honey
  • Fresh thyme leaves or microgreens, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss peeled and sliced beet rounds in olive oil, salt, and pepper. Roast for 25-30 minutes, flipping halfway through.
  2. Combine blue cheese, sour cream or Greek yogurt, and lemon juice until smooth to make the filling.
  3. Assemble towers by layering beet slices with cheese filling, stacking 2-3 layers high.
  4. Drizzle assembled towers with honey and garnish with walnuts and thyme or microgreens.

Notes
