  • 1 to 2 drops gel food coloring (optional)
  • 5 to 6 flat round cookies (shortbread or sugar cookies)
  • Optional decorative sprinkles or edible glitter

Instructions

  1. Start by preheating your oven to 200°F (95°C). Line a baking sheet with parchment paper to ensure that your meringues do not stick while baking. Next, set up your piping bag fitted with a large star tip.
  2. In a clean and dry bowl, begin beating the egg whites on medium speed. At this point, add the cream of tartar, which helps stabilize the egg whites. Increase your mixer speed and continue to beat until soft peaks form.
  3. Carefully add the granulated sugar one tablespoon at a time. Once all the sugar is incorporated, keep whipping until the meringue reaches stiff, glossy peaks.
  4. Gently fold in the vanilla extract and any food coloring you’ve chosen to use.
  5. With your meringue ready, place your pre-baked cookie bases onto the parchment-lined baking sheet. Carefully fill the prepared piping bag with the meringue mixture and pipe spirals on top of each cookie.
  6. Place the baking sheet in the preheated oven and bake your meringues for 1.5 to 2 hours.
