  • ¼ cup sun-dried tomatoes, finely chopped
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon truffle oil (plus more for drizzling)
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon crushed native pepperberries (or cracked black pepper)

Instructions

  1. Start by gathering all your ingredients and placing the softened cream cheese in a large mixing bowl. Add the roasted red peppers, green and black olives, marinated artichoke hearts, and sun-dried tomatoes. Sprinkle in the grated Parmesan cheese along with the truffle oil, black pepper, salt, and crushed native pepperberries. Mix all the ingredients together until evenly combined.
  2. Once your filling is well-mixed, lay a large sheet of plastic wrap on your countertop. Transfer the filling onto the center of the wrap, forming it into a thick log shape about 8 inches long. Carefully roll the mixture into a tight log, twisting the ends of the plastic wrap to secure it. Chill in the refrigerator for 1 to 2 hours.
  3. In a shallow dish, combine the finely chopped fresh parsley with the crushed roasted macadamias. Roll the log in the parsley and macadamia mixture, pressing gently to make sure it adheres evenly to all sides.
  4. To serve, place the log on a rustic wooden serving board. Drizzle with additional truffle oil and decorate with prosciutto shards, finger lime caviar pearls, and fresh herbs.
