Ingredients

- 30ml (1 oz) coconut cream
- 30ml (1 oz) fresh lime juice
- 1 tablespoon sugar (or simple syrup)
- A handful of fresh mint leaves
- 1/4 cup soda water (sparkling water or club soda)
- Ice cubes, as needed
- 1 tablespoon shredded coconut (for rim)
- Lime wedge (for rimming the glass)
- Fresh pomegranate seeds (for garnish)
- 1 lime wheel (for garnish)
- 1 mint sprig (for garnish)
Instructions
- Prepare the glass by rimming it with lime and shredded coconut.
- Muddle mint leaves with sugar in a shaker.
- Add white rum, coconut cream, and lime juice, fill with ice, and shake.
- Strain into the rimmed glass, top with soda water, and stir gently.
- Garnish with mint, lime wheel, and pomegranate seeds.
Notes
Use fresh mint for best flavor. Adjust sweetness based on coconut cream used.
