Ingredients

  • 30ml (1 oz) coconut cream
  • 30ml (1 oz) fresh lime juice
  • 1 tablespoon sugar (or simple syrup)
  • A handful of fresh mint leaves
  • 1/4 cup soda water (sparkling water or club soda)
  • Ice cubes, as needed
  • 1 tablespoon shredded coconut (for rim)
  • Lime wedge (for rimming the glass)
  • Fresh pomegranate seeds (for garnish)
  • 1 lime wheel (for garnish)
  • 1 mint sprig (for garnish)

Instructions

  1. Prepare the glass by rimming it with lime and shredded coconut.
  2. Muddle mint leaves with sugar in a shaker.
  3. Add white rum, coconut cream, and lime juice, fill with ice, and shake.
  4. Strain into the rimmed glass, top with soda water, and stir gently.
  5. Garnish with mint, lime wheel, and pomegranate seeds.

Notes
