Ingredients

  • 1 3/4 cups almond flour
  • 1 1/4 cups powdered sugar
  • 1/4 cup granulated sugar
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Buttercream or ganache for filling

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In another bowl, beat egg whites and cream of tartar until soft peaks form.
  4. Gradually add granulated sugar and continue beating to form stiff peaks.
  5. Fold in the almond flour mixture and food coloring if using.
  6. Pipe small circles onto a baking sheet lined with parchment paper.
  7. Let sit for 30 minutes before baking.
  8. Bake for 15-20 minutes, then cool completely.
  9. Fill with buttercream or ganache.
