- 1 3/4 cups almond flour
- 1 1/4 cups powdered sugar
- 1/4 cup granulated sugar
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Food coloring (optional)
- Buttercream or ganache for filling
Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, sift together almond flour and powdered sugar.
- In another bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add granulated sugar and continue beating to form stiff peaks.
- Fold in the almond flour mixture and food coloring if using.
- Pipe small circles onto a baking sheet lined with parchment paper.
- Let sit for 30 minutes before baking.
- Bake for 15-20 minutes, then cool completely.
- Fill with buttercream or ganache.
Notes
Make sure to age the egg whites for best results.
