Instructions

  1. Begin by rolling out your refrigerated pie crusts on a clean surface. Use a round cookie cutter to make symmetrical circles.
  2. Place half of your pie circles onto your prepared baking sheet. Scoop approximately one tablespoon of vanilla ice cream into the center of each pie circle. Follow this by placing small, alternating scoops of the strawberry and blueberry ice creams.
  3. Gently cover each filled circle with another pie circle. Press the edges firmly with a fork to seal everything in. Use a sharp knife to cut tiny slits on each pie’s top, allowing steam to escape during baking.
  4. In a small mixing bowl, whisk together the egg and milk until thoroughly combined. Using a pastry brush, gently coat the top of each pie with this wash. Sprinkle with granulated sugar. Place the pies in the oven and let them bake for about 12 to 15 minutes.
