- 50 g shredded lettuce

- 2 tablespoons mayonnaise or crema

- Start by preparing the chicken for the torta. In a mixing bowl, combine the boneless, skinless chicken breasts or thighs with chipotle in adobo. Sprinkle salt and black pepper to enhance the flavor, then drizzle a bit of olive oil. Toss the chicken until it’s well-coated with the marinade. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes. This waiting period allows the flavors to penetrate the chicken, resulting in a more tasty and juicy outcome.
- Once marinated, it’s time to cook the chicken. Heat your grill pan or skillet over medium heat. Place the marinated chicken in the pan and let it cook for about 5–6 minutes per side. You aim for a nice golden-brown crust to form while ensuring that the internal temperature reaches 74°C (165°F). After cooking, transfer the chicken to a cutting board, and allow it to rest for 5 minutes. This resting period is vital as it lets the juices redistribute throughout the meat, making each bite succulent and tender. After resting, slice the chicken thinly, ready to layer into your sandwich.
- Now it’s time to focus on the telera or bolillo rolls. Using a sharp knife, slice each roll in half. Heat a skillet over medium heat and place the rolls cut-side down.
