- 1 lb boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup cooked rice, quinoa, or grain of choice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- Lemon wedges, for serving
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped dill or mint (optional)
- Salt and pepper, to taste
Instructions
- In a mixing bowl, blend together the olive oil, dried oregano, garlic powder, onion powder, and a sprinkling of salt and pepper. Marinate the chicken for at least 30 minutes in the refrigerator.
- Prepare the tzatziki sauce by combining Greek yogurt with grated cucumber, minced garlic, and lemon juice. Add dill or mint if desired and season with salt and pepper. Chill in the fridge.
- Preheat your grill or skillet to medium-high heat. Cook marinated chicken for 6–8 minutes per side until the internal temperature reaches 165°F (75°C). Let it rest and slice.
- Assemble bowls with rice, topped with sliced chicken, tomatoes, cucumber, onion, and tzatziki sauce. Serve with lemon wedges.
Notes
You can use different proteins or grains as substitutes. Make the tzatziki a day in advance for enhanced flavors.
