  • 3 large eggs
  • ¼ cup almond flour
  • ¼ tsp baking powder
  • ½ cup fresh blueberries
  • ¼ tsp salt
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the cottage cheese and eggs until smooth.
  3. Add almond flour, baking powder, salt, vanilla, and sweetener. Mix well.
  4. Gently fold in the fresh blueberries.
  5. Scoop dollops of the batter onto the prepared baking sheet.
