  • 1 cup brown sugar (light or dark)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsweetened Dutch-processed cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon espresso powder (optional)
  • 1/2 teaspoon fine sea salt
  • 4 Biscoff cookies, crushed
  • 1/4 cup extra cookie butter, for drizzling (optional)

Instructions

  1. Line an 8×8 metal baking pan with parchment paper, ensuring that the parchment hangs over the edges.
  2. While your pan is chilling, preheat your oven to 350°F (180°C).
  3. In a large mixing bowl, combine the brown sugar, granulated sugar, eggs, and vanilla extract. Use a whisk to mix until thick, pale, and fluffy, about 3 to 4 minutes.
  4. In a microwave-safe bowl, melt the unsalted butter and semi-sweet chocolate chips. Stir until smooth and whisk in the cocoa powder until fully combined.
  5. Gently fold the melted chocolate mixture into the egg and sugar combination, being careful not to overmix.
  6. Sift the flour, espresso powder (if using), and fine sea salt over the mixture, gently folding until you achieve a smooth batter.
  7. Pour half of the brownie batter into your prepared pan, layering with chilled Biscoff cookie butter, then topping with the remaining batter.
  8. Sprinkle crushed Biscoff cookies over the top and drizzle extra cookie butter if desired.
  9. Bake for 30 to 40 minutes until a toothpick inserted comes out with moist crumbs attached.
  10. Allow to cool completely in the pan before lifting out and cutting into 9 squares.
