  • 10 oz shortbread cookies (approximately one box)

Instructions

  1. Begin by placing the softened cream cheese in a large mixing bowl. Using your hand mixer, beat it for about two minutes or until it becomes light and fluffy.
  2. Next, you’ll introduce the instant vanilla pudding mix and vanilla extract to the bowl. Continue mixing until the ingredients are smooth and well combined.
  3. Using your rubber spatula, gently fold in the whipped topping until flawlessly incorporated into the pudding mixture.
  4. Carefully fold in about 9 to 10 ounces of rainbow sprinkles, reserving a small handful for garnish.
  5. Line the bottom of your springform pan with parchment paper. Start by spreading 1/2 cup of the pudding mixture evenly across the base. Add a layer of shortbread cookies, then pour one-third of the remaining pudding mixture over the cookies and spread it out evenly.
