Instructions

- Heat 2 tablespoons of butter and a tablespoon of olive oil in a large skillet over medium-high heat, then sear the chicken.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat, add the chopped onion and diced red bell pepper.
- Stir in the long-grain white rice and allow it to toast in the mixture.
- Pour in the chicken broth, stirring well, and bring to a gentle simmer.
- Nestle the chicken on top of the rice, cover, and let cook until the rice absorbs all liquid.
- Sprinkle grated Parmesan over the rice, cover, and let cheese melt.
