Description

Garlic Butter Steak with Cheesy Linguine in Four-Cheese Sauce combines the succulence of steak in luscious garlic butter with the creamy richness of linguine. 


Ingredients

  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely minced or pressed
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • 12 oz linguine pasta
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 0.5 cup shredded parmesan cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup cream cheese
  • 0.25 cup sharp cheddar cheese, shredded
  • Salt and freshly ground pepper, to taste
  • Pinch of nutmeg (optional)
  • Chopped parsley, for garnish

Instructions

  1. Prep Your Steak: Cut into 1-inch cubes, pat dry, and season with salt and pepper.
  2. Boil the Pasta: Prepare a large pot of salted water and bring to a boil.
  3. Sear the Steak: Heat a skillet, add oil, sear steak for 2-3 minutes on each side. Set aside.
  4. Craft the Garlic Butter: Melt butter in skillet, add garlic, cook till aromatic.
  5. Combine Steak and Garlic Butter: Toss steak in garlic butter and let rest.
  6. Prepare the Linguine: Cook linguine to al dente and reserve 1/2 cup pasta water.
  7. Make the Cheese Sauce: Melt butter, make roux with flour, add milk and cream.
  8. Melt the Cheeses: Add cheeses, season with salt, pepper, nutmeg.
  9. Assemble: Fold linguine into cheese sauce, top with steak cubes.

Notes

Reserve pasta water helps sauce consistency. Steak should not be crowded while searing.
