  • 2 chicken breasts
  • 8 oz pasta (penne or spaghetti works best)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Start by cooking your choice of pasta according to the package instructions. This should typically take about 8-10 minutes, depending on your pasta type. Once cooked to your desired level of tenderness, drain the pasta and set it aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the chicken breasts thoroughly with salt and black pepper. Lay the chicken breasts in the hot skillet and cook until golden brown on both sides, usually about 6-7 minutes per side. Once cooked, remove the chicken from the skillet and let it rest on a cutting board for about 5 minutes before slicing it into strips.
  3. In the same skillet, add the minced garlic and sauté for about a minute until it becomes aromatic. Add the halved cherry tomatoes along with the balsamic vinegar. Let them cook together for about 3-4 minutes, allowing the tomatoes to soften and release their juices.
  4. Introduce the cooked pasta back into the skillet. Add the chopped basil and gently toss to ensure all the pasta is well coated with the garlicky, tomato sauce. Layer the sliced chicken on top.
  5. Finish off by sprinkling the freshly grated parmesan cheese and chopped parsley over the top. Serve the dish while it’s warm, with extra parmesan on the side.
