Ingredients
Scale
- 1 lb boneless chicken thighs or breasts, cut into bite-size pieces
- 1/2 cup cornstarch
- 1/2 tsp salt
- 1/2 tsp black pepper
- Vegetable oil for frying
- For the ginger-soy sauce:
- 1/4 cup soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp chili flakes (optional)
Instructions
- Begin by seasoning your chicken pieces generously with salt and black pepper. Next, dredge the seasoned chicken in cornstarch, ensuring each piece is well-coated.
- Heat a generous amount of vegetable oil in a skillet or deep fryer, bringing it to 350°F (175°C) for optimal frying. Fry them for approximately 4–5 minutes, or until they achieve a beautiful golden brown color and a crispy texture.
- In a saucepan, combine the soy sauce, honey, grated ginger, minced garlic, rice vinegar, sesame oil, and optional chili flakes. Heat this mixture over medium heat, allowing it to simmer until the sauce thickens slightly.
- Once the sauce has thickened, add in the crispy chicken pieces. Gently toss the chicken in the ginger-soy glaze for about a minute.
- Serve your Ginger Soy Crispy Chicken hot, over a bed of steamed rice or noodles. Garnish with sesame seeds or chopped green onions.
Notes
Ensure the oil is hot enough before adding the chicken to achieve a crispy texture. Monitor the frying process closely to avoid overcooking the chicken pieces.
