- 1 wheel of brie (8–12 oz)
- 1 sheet frozen puff pastry, thawed
- 2 Honeycrisp apples, sliced
- 3 tbsp salted butter
- 3 tbsp maple syrup
- 2 tbsp apple butter or fig preserves
- 1 beaten egg (for brushing)
- Coarse sugar (for sprinkling)
- Fresh thyme (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- In a baking dish, combine Honeycrisp apples, salted butter, and maple syrup. Toss and roast for about 25 minutes until tender.
- Lay out the thawed puff pastry on a lined baking sheet and place the brie in the center. Slice off the top rind and spread apple butter over the brie.
- Fold the puff pastry over the brie, seal the edges, brush with beaten egg, and sprinkle with coarse sugar.
- Bake for 20-25 minutes until golden brown and crisp.
- Top the baked brie with roasted apples and fresh thyme. Serve warm with crackers or bread.
