  • 1 cup whole-berry cranberry sauce
  • 2 tbsp honey (optional for added sweetness)
  • 2 tbsp finely chopped pistachios
  • Fresh rosemary sprigs, trimmed into small “tree” shapes
  • 1 egg, beaten (for egg wash)
  • Flour for dusting
  • Pinch of flaky sea salt

Instructions

  1. Start by preheating your oven to 400°F (200°C). On a clean surface, sprinkle a light dusting of flour and roll out the thawed puff pastry sheet. This step ensures that the pastry is smooth and free of creases. Use a rolling pin to gently roll it to your desired thickness, typically around one-eighth of an inch.
  2. Next, cut the puff pastry into 12 equal squares. Each square should be about 3 inches by 3 inches to fit neatly into the wells of your mini muffin tin. Press each square gently into the muffin tin, making sure to leave the corners slightly raised. This creates a lovely, rustic edge that will puff up beautifully while baking.
  3. Cut the brie cheese into small cubes, aiming for pieces that fit comfortably within the pastry cups. Place one cube of brie into each tartlet, allowing the richness of the cheese to melt and mingle with the other flavors as they bake.
  4. Spoon a generous amount of whole-berry cranberry sauce over the brie in each tartlet. Make sure to let the sauce drizzle down into the cheese, harmonizing the flavors and adding a burst of sweetness that perfectly offsets the creaminess of the brie.
  5. Using a pastry brush, carefully brush the exposed edges of the pastry with the beaten egg wash. This technique will give your tartlets a beautiful golden-brown color as they bake. Do not skip this step; the visual appeal of your dish will greatly enhance with this glossy finish.
