  • 12 oz linguine
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Begin by cutting the chicken breasts into bite-sized pieces. Pat them dry to ensure they sear beautifully in the pan. Season with salt, pepper, and a sprinkle of red pepper flakes.
  2. Heat olive oil and a tablespoon of butter in a large skillet. Cook the chicken pieces until golden and cooked through. Remove and set aside.
  3. In the same skillet, add remaining butter and sauté garlic. Stir in heavy cream, and scrape the skillet to incorporate all the chicken flavors.
  4. Add parmesan cheese to the sauce, stirring continuously until it melts smoothly.
  5. In a pot, cook the linguine until al dente. Reserve half a cup of pasta water.
  6. Add the cooked linguine to the sauce and toss. Reintroduce the chicken, combining it with the pasta and sauce. Serve hot, garnished with parsley and chili flakes.

Notes

Ensure not to overcrowd the skillet when cooking the chicken for an even sear. Use fresh parmesan for the best flavor.
