Instructions
- Start by mixing the graham cracker crumbs, melted butter, and sugar in a medium mixing bowl. Press this mixture firmly into the bottom of your lined springform pan and bake the crust for 10 minutes. Allow it to cool completely.
- In another bowl, beat the softened cream cheese until smooth. Gradually add honey and granulated sugar, then add eggs one at a time, mixing just enough to incorporate each egg. Follow with vanilla extract, heavy cream, and lemon juice, mixing into a silky batter.
- Pour the cheesecake filling over the pre-baked crust and bake for 40 to 45 minutes. Turn off the oven and let the cheesecake cool inside.
- For the honeycomb, combine sugar, water, and honey in a saucepan and heat until it reaches an amber color, then stir in baking soda and pour onto parchment paper to harden.
