- 4 cups zucchini, finely shredded with liquid (540 g; about 5–6 medium)
- 2 cups granulated sugar (396 g)
- 1/4 cup lemon juice (60 ml)
- 1 box Jell-O, any flavor (3 oz / 85 g; strawberry, peach, apricot, or cherry)
Instructions
- In a reliable stock pot over medium heat, combine the finely shredded zucchini, sugar, and lemon juice. Stir these ingredients together and bring them to a gentle simmer.
- Lower the heat to medium-low, and let the mixture cook for about 10-20 minutes, stirring occasionally until the liquid reduces by approximately half.
- Stir in your chosen Jell-O powder until it’s completely dissolved into the mixture.
- Take the pot off the heat and allow the jam to cool slightly before spooning it into jars.
