  • ½ cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp olive oil

  • 2 cups cooked rice (or quinoa)
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¼ cup Kalamata olives (optional)
  • Fresh parsley, for garnish

Instructions

  1. Begin by placing your cubed chicken into a large mixing bowl. Pour in the olive oil, lemon juice, minced garlic, and dried oregano. Sprinkle with salt and black pepper to taste. Use your hands or a spoon to ensure that the chicken is evenly coated with the marinade. Cover the bowl and let it rest in the refrigerator for about 30 minutes.
  2. After marinating, heat a skillet over medium-high heat. Once the skillet is hot, add the marinated chicken in a single layer. Cook for around 6–8 minutes, until the chicken is fully cooked and no longer pink in the center.
  3. While the chicken is cooking, grab a small bowl to make the garlic yogurt sauce. Combine the Greek yogurt, minced garlic, lemon juice, olive oil, and a pinch of salt. Stir until smooth.
  4. Start by placing a generous portion of cooked rice or quinoa into each serving bowl. Top with the sautéed chicken, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and Kalamata olives if using.
  5. Drizzle your homemade garlic yogurt sauce over the top and garnish with chopped parsley. Serve immediately.

Notes

For meal prep, cook the chicken and rice ahead of time. Leftovers can last up to three days. Store garlic yogurt sauce separately.
