- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup crushed pineapple, drained
- 2 cups shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine softened unsalted butter with granulated and brown sugar, and beat until light and fluffy.
- Add eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
- Whisk together the dry ingredients in a separate bowl.
- Gradually mix the dry ingredients into the butter and sugar mixture until combined.
- Fold in the drained crushed pineapple and shredded coconut.
- Drop spoonfuls of cookie dough onto a prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden brown.
- Allow to cool on a wire rack.
