  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 1/4 cups all-purpose flour

  • 1/2 tsp salt
  • 1 cup crushed pineapple, drained
  • 2 cups shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened unsalted butter with granulated and brown sugar, and beat until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  4. Whisk together the dry ingredients in a separate bowl.
  5. Gradually mix the dry ingredients into the butter and sugar mixture until combined.
  6. Fold in the drained crushed pineapple and shredded coconut.
  7. Drop spoonfuls of cookie dough onto a prepared baking sheet, spaced about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are golden brown.
  9. Allow to cool on a wire rack.
