Ingredients

  • ½ cup white or light miso paste
  • 8 garlic cloves, finely grated
  • 2 tbsp fresh ginger, grated
  • 1 tbsp fresh horseradish root, grated
  • 2 tsp avocado or coconut oil
  • 2 tbsp raw apple cider vinegar
  • 1 tsp ground turmeric
  • ½ tsp sea salt (or to taste)
  • Juice of 1 large lemon (about 2 tbsp)
  • Zest of ½ lemon (optional)
  • 1 scallion, thinly sliced (for garnish)

Instructions

  1. Create Your Flavor Base: In a small mixing bowl, combine finely grated garlic, ginger, grated horseradish, ground turmeric, apple cider vinegar, avocado or coconut oil, and sea salt. Mix until smooth.
  2. Heat Up Your Water: In a large pot, bring 8 cups of water to a gentle boil, then reduce the heat to simmer.
  3. Whisk the Miso: Combine white miso paste with a bit of hot water until smooth.
  4. Combine Everything: Mix the miso and flavor base into the simmering water, then add lemon juice and zest.
  5. Serve It Up: Ladle into bowls and garnish with scallions.
