- ½ cup white or light miso paste
- 8 garlic cloves, finely grated
- 2 tbsp fresh ginger, grated
- 1 tbsp fresh horseradish root, grated
- 2 tsp avocado or coconut oil
- 2 tbsp raw apple cider vinegar
- 1 tsp ground turmeric
- ½ tsp sea salt (or to taste)
- Juice of 1 large lemon (about 2 tbsp)
- Zest of ½ lemon (optional)
- 1 scallion, thinly sliced (for garnish)
Instructions
- Create Your Flavor Base: In a small mixing bowl, combine finely grated garlic, ginger, grated horseradish, ground turmeric, apple cider vinegar, avocado or coconut oil, and sea salt. Mix until smooth.
- Heat Up Your Water: In a large pot, bring 8 cups of water to a gentle boil, then reduce the heat to simmer.
- Whisk the Miso: Combine white miso paste with a bit of hot water until smooth.
- Combine Everything: Mix the miso and flavor base into the simmering water, then add lemon juice and zest.
- Serve It Up: Ladle into bowls and garnish with scallions.
