- 1 pound cod fillets, cut into 1-inch strips
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 cup all-purpose flour
- ½ teaspoon sweet or smoked paprika
- 2 large eggs, beaten
- 1 tablespoon Dijon mustard
- 1 cup panko breadcrumbs
- 1 cup seasoned breadcrumbs
- Olive oil cooking spray
- Tartar sauce for serving
Instructions
- Preheat your oven to 425°F (220°C). Prepare your baking sheet by lining it with parchment paper or greasing it lightly.
- Season the cod strips with kosher salt and black pepper.
- Organize three shallow dishes: one for mixing the flour and paprika, another for the eggs and Dijon mustard, and the third for combining panko with seasoned breadcrumbs.
- Dredge each cod strip in the flour mixture, then dip it into the egg mixture, and finally press it into the breadcrumb mixture.
- Arrange the breaded fish sticks on the baking sheet, spray the tops lightly with olive oil, and bake for 15–18 minutes.
Notes
Ensure even cooking by baking the fish sticks on the center rack.
