- 2 cups cooked brown rice
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup broccoli florets
- 1 cup diced carrots
- 1 cup low-sodium chicken broth
- 1 cup Greek yogurt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded low-fat cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine the rice, chicken, broccoli, and carrots.
- In a separate bowl, whisk together the chicken broth, Greek yogurt, garlic powder, onion powder, and thyme. Season with salt and pepper.
- Pour the sauce over the rice mixture, combine, and spread in the baking dish. Top with cheese if using.
- Cover with foil and bake for 25 minutes, remove the foil, and bake for an additional 15 to 20 minutes.
