- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add your seasoned chicken and cook for about 5 to 6 minutes. Flip and cook for another 4 to 5 minutes until browned and cooked through.
- Add sliced zucchini and yellow squash to the skillet, season with remaining Italian seasoning, salt, and pepper. Stir gently and cook for 3 to 4 minutes.
