  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 3 tsp Italian seasoning
  • 1 tsp garlic powder
  • Juice and zest of 1 lemon
  • Salt and black pepper, to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. In a mixing bowl, combine your diced chicken pieces with a generous pinch of salt, freshly ground black pepper, garlic powder, and 2 teaspoons of Italian seasoning. Toss the chicken until it is thoroughly coated in the seasoning mix.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add your seasoned chicken and cook for about 5 to 6 minutes. Flip and cook for another 4 to 5 minutes until browned and cooked through.
  3. Add sliced zucchini and yellow squash to the skillet, season with remaining Italian seasoning, salt, and pepper. Stir gently and cook for 3 to 4 minutes.
  4. Stir in the lemon juice and zest, garnish with chopped parsley if desired, and serve hot.
