Ingredients
- Chickpeas: 1 can (15 oz), drained and rinsed
- Noodles: 1 ½ cups
- Carrots: 2 medium, peeled and sliced
- Celery: 2 stalks, chopped
- Garlic: 3 cloves, minced
- Vegetable broth: 4 cups
- Olive oil: 1 tablespoon
- Lemon juice: 1 tablespoon
- Salt and pepper: To taste
Instructions
- Begin by placing a large pot or Dutch oven over medium heat. Allow it to warm for a minute or two before proceeding to the next step.
- Add one tablespoon of olive oil to the pot, then toss in the minced garlic, sliced carrots, and chopped celery. Sauté for about five minutes or until tender.
- Carefully pour four cups of vegetable broth into the pot and bring to a gentle simmer.
- Introduce the drained chickpeas and noodles, along with a tablespoon of fresh lemon juice. Stir to distribute.
- Allow to simmer for approximately 10–12 minutes, until the noodles reach desired tenderness.
- Taste and adjust seasoning with salt and pepper before serving.
