Ingredients

  • Chickpeas: 1 can (15 oz), drained and rinsed
  • Noodles: 1 ½ cups
  • Carrots: 2 medium, peeled and sliced
  • Celery: 2 stalks, chopped
  • Garlic: 3 cloves, minced
  • Vegetable broth: 4 cups
  • Olive oil: 1 tablespoon
  • Lemon juice: 1 tablespoon
  • Salt and pepper: To taste

Instructions

  1. Begin by placing a large pot or Dutch oven over medium heat. Allow it to warm for a minute or two before proceeding to the next step.
  2. Add one tablespoon of olive oil to the pot, then toss in the minced garlic, sliced carrots, and chopped celery. Sauté for about five minutes or until tender.
  3. Carefully pour four cups of vegetable broth into the pot and bring to a gentle simmer.
  4. Introduce the drained chickpeas and noodles, along with a tablespoon of fresh lemon juice. Stir to distribute.
  5. Allow to simmer for approximately 10–12 minutes, until the noodles reach desired tenderness.
  6. Taste and adjust seasoning with salt and pepper before serving.
