Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 large egg, beaten
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup raisins (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish with melted coconut oil.
  2. In a mixing bowl, combine the old-fashioned oats, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the almond milk, maple syrup, egg, melted coconut oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until combined. Fold in optional raisins and nuts if desired.
  5. Transfer the mixture to the prepared baking dish.
  6. Mix coconut sugar, ground cinnamon, and melted coconut oil for the cinnamon swirl and drizzle it over the top. Swirl gently with a knife.
  7. Bake for 35-40 minutes until golden brown and set.
  8. Let it cool for a few minutes before serving with extra maple syrup or yogurt.
