- Start by heating a large soup pot over medium heat for about a minute. Add the olive oil, allowing it to warm before introducing the chopped onion, diced carrots, and diced celery. Sauté these vegetables for 5 minutes until they soften and become fragrant. As a final touch, incorporate the minced garlic, cooking for just an additional 30 seconds to release its aromatic qualities.
- Next, bring in the boneless skinless chicken thighs, placing them gently into the pot. Pour in the chicken broth along with the can of diced tomatoes. Stir these ingredients together carefully to ensure they are well combined.
