- 4 Tbsp butter
- 1 medium onion, finely chopped
- 1 lb cremini or baby bella mushrooms, sliced
- 2 Tbsp flour
- 1 Tbsp Hungarian or sweet paprika
- 3 cups chicken broth
- 1 cup milk
- 1 Tbsp Tamari sauce
- ½ cup sour cream
- 1 Tbsp lemon juice
- 3 Tbsp chopped fresh parsley
- 2 Tbsp chopped fresh dill
- 1 Tbsp chopped fresh thyme
- Salt, black pepper, and ground chili pepper, to taste
Instructions
- Begin your culinary journey by melting the butter in a large pot over medium heat. Once the butter is nicely foamy, add in the finely chopped onion. Stir occasionally, allowing the onion to cook for about three to four minutes until it softens and becomes translucent.
- Next, it’s time to add the sliced mushrooms into the pot. Increase the heat slightly and sauté them for approximately seven to eight minutes.
- Now that your vegetables are perfectly sautéed, sprinkle the flour and paprika over the mushroom mixture. Stir well to ensure everything is coated evenly, and allow it to cook for another one to two minutes.
- Gradually pour in the chicken broth, stirring continuously. Follow this by adding the milk and Tamari sauce. Bring the mixture to a gentle simmer.
- Remove the pot from the heat. To finish off your soup, stir in the sour cream, lemon juice, parsley, dill, and thyme.
- Allow the soup to rest for a few minutes before serving.
Notes
For a thicker soup, add more flour during cooking or blend part of the soup for a creamier consistency.
