- 4 pork chops (bone-in or boneless)
- 2 medium onions, thinly sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 tablespoon flour
- 2 teaspoons fresh thyme (or 1 teaspoon dried)
- 2 teaspoons garlic, minced
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 cup shredded Gruyere cheese (optional)
Instructions
- Begin by heating a combination of butter and olive oil in your large skillet over medium-high heat. Season the pork chops generously with salt and pepper. Once your skillet is hot, place the pork chops in and sear them on each side until they’re beautifully browned. Once seared, remove pork chops from the skillet, and set them aside on a plate for later use.
- In the same skillet, add the thinly sliced onions. Keeping the heat medium, cook them gently while stirring occasionally for about 15 minutes until wonderfully caramelized.
- Once your onions are done, incorporate the minced garlic and thyme, sautéing for an extra minute or two. Next, add the flour and allow it to cook for a minute to form a roux.
- With the roux ready, gradually add the beef broth, stirring constantly to prevent lumping. Then add Worcestershire sauce and the wine if chosen. Stir everything well before returning the previously seared pork chops back to the skillet.
- Once the pork chops are snugly back in the pan, lower the heat, cover with a lid, and let them simmer for about 10 to 12 minutes. If you’re using Gruyere cheese, sprinkle it on top of your chops before serving.
Notes
White wine is optional but adds a sophisticated undertone to the sauce. Feel free to substitute Gruyere with similar melting cheeses like mozzarella or provolone if desired.
