- 1 pound cooked chicken or beef sausage, sliced into 1/2 inch rounds
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 cup frozen or canned corn kernels
- 2 tablespoons all-purpose flour
- 2 cups low sodium chicken or beef broth
- 1/2 teaspoon dried thyme (or fresh, chopped)
- Salt and freshly ground black pepper to taste
- 4 cups prepared creamy mashed potatoes
- Fresh parsley or thyme for garnish, chopped
Instructions
- Start by heating the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the sliced sausage to the skillet.
- Once the sausage is nicely browned, remove it from the skillet and set it aside. Lower the heat to medium and toss in the chopped onion. Let it cook for 5 to 7 minutes until the onion is translucent.
- Sprinkle the all-purpose flour over the cooked onion and garlic mixture. Stir it constantly for about a minute to create a roux.
- Gradually pour in the chicken or beef broth while continuously whisking. This should take about 3 to 5 minutes.
- Add the sweet corn kernels and dried thyme to the gravy. Return the browned sausage to the skillet and let this cook for another 5 to 10 minutes.
- To plate your dish, spoon a generous portion of the creamy mashed potatoes onto plates and ladle the sausage and gravy mixture over the potatoes.

Adjust the thickness of the sauce by controlling the amount of broth added — less broth yields a thicker gravy, while more broth results in a thinner sauce.
