  • Author: Alioui
  • Total Time: 1 hour
  • Yield: 6 servings 1x

Description

This hearty dish combines lentils with creamy mashed potatoes, offering warmth and satisfaction in every bite.

Ingredients

Scale
  • 4 tbsp butter
  • 4 large potatoes, peeled and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp thyme
  • ½ cup milk
  • 1 onion, diced
  • 1 bay leaf
  • 2 carrots, sliced
  • 1 cup dry green or brown lentils
  • Salt and pepper, to taste
  • 2 celery stalks, sliced
  • 4 cups vegetable broth
  • 3 garlic cloves, minced

Instructions

  1. Begin by placing the peeled and chopped potatoes in a pot of boiling water. Cook them until they become tender, typically in 15-20 minutes. Once cooked, drain the water and return the potatoes to the pot. Add butter, milk, salt, and pepper, then mash vigorously until you achieve a smooth and creamy consistency.
  2. Heat the olive oil in a large pot over medium heat. Add the diced onions, sliced carrots, and celery. Stir occasionally, allowing them to soften over the course of around five to seven minutes. This process develops their flavors, essential for a tasty stew. Once softened, add minced garlic and sauté for an additional minute to release its aroma.
  3. Incorporate the dry lentils, canned tomatoes, vegetable broth, thyme, and bay leaf into the pot. Stir everything together, bringing the mixture to a gentle boil. Once boiling, reduce the heat to a simmer, cover, and let the stew cook for 25 to 30 minutes. This allows the lentils to soften and absorb the stew’s flavor, transforming each bite into a savory delight.
  4. Once the lentils are tender, remove the bay leaf and season with additional salt and pepper if needed. To serve, spoon generous portions of the stew over a bed of mashed potatoes. The sum of these parts delivers a meal that’s comforting, flavorful, and satisfying.

Notes

Consider preparing the stew ahead of time as it often tastes even better the next day after the flavors have melded together.
