Description

Hearty Slow Cooker Cowboy Beans are the perfect blend of taste and simplicity.

Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced (yellow or red)
  • 2 cloves garlic, minced
  • 15 oz can kidney beans, drained and rinsed
  • 15 oz can white beans, drained and rinsed
  • 15 oz can pinto or black beans, drained and rinsed
  • 15 oz can diced tomatoes, with juices
  • 8 oz can tomato sauce
  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 tbsp barbecue sauce or liquid smoke (optional)

Instructions

  1. Begin your cowboy beans adventure by browning the ground beef in a large skillet over medium heat. Make sure to cook until the beef is fully browned and no longer pink. Once done, drain any excess fat to keep your dish healthy and delicious.
  2. With the beef ready, add the diced onion, bell pepper, and minced garlic to the skillet. This trio brings sweet and savory notes to your beans. Sauté these ingredients together for about 3-4 minutes, just until the onions are translucent and the garlic is fragrant. When these vegetables meld with the beef, the aroma will be irresistible!
  3. Transfer the browned beef mixture to your slow cooker. This is where the magic happens! Add the drained and rinsed kidney beans, white beans, and pinto or black beans, ensuring that the flavors will blend evenly as they cook. Next, pour in the diced tomatoes with their juices and tomato sauce, then stir in the ketchup, brown sugar, mustard, Worcestershire sauce, smoked paprika, chili powder, black pepper, and salt. If you like a hint of smoky flavor, drizzle in some barbecue sauce or liquid smoke at this stage.
  4. Give everything a hearty stir to combine all the ingredients well. Set your slow cooker to LOW for 6-7 hours or HIGH for 3-4 hours.
  5. When the cooking time is over, serve your cowboy beans hot! They pair beautifully with cornbread, rice, or a crisp salad. Consider topping with shredded cheese or a dollop of sour cream for added creaminess and flavor.

Notes

Leftovers are not only delicious the next day but they also freeze beautifully, making this recipe ideal for meal prep.
