- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed (about 1 1/2 cups)

Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla.
- Gently stir in the mashed bananas until just combined.
- Fold the dry ingredients into the wet mixture until just combined. Fold in nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, until a toothpick comes out clean.
