Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in sour cream and vanilla.
  4. Gently stir in the mashed bananas until just combined.
  5. Fold the dry ingredients into the wet mixture until just combined. Fold in nuts if using.
