Ingredients

- 4–5 medium tomatoes, sliced into thick rounds
- 1 small red onion, thinly sliced into rings
- 1½ cups mixed olives (green and black)
- 6–8 oz feta, cut in small cubes
- 3 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- 1 tsp dried oregano
- 2 tbsp chopped fresh parsley
- Salt and black pepper
Instructions
- Start by creating the dressing that will bring all the flavors together. In a small bowl, combine the olive oil, red wine vinegar (or lemon juice), dried oregano, a pinch of salt, and cracked black pepper. Whisk the ingredients vigorously until they’re well blended.
- On your prepared white plate, place the sliced tomatoes as the first layer. Let them overlap slightly for a more stable base.
- Sprinkle a handful of mixed olives over the onions, followed by several small cubes of feta cheese. Drizzle a spoonful of the prepared dressing over this layer.
- Continue the same process by adding more layers of tomatoes, onions, olives, and feta.
- For the final layer, add a generous amount of feta on top, followed by more olives if desired. Drizzle the remaining dressing over the entire tower.
Notes
Maximize flavor by letting the ingredients marinate in the dressing for at least 30 minutes before serving.
