- 1 medium sugar pumpkin (also called pie pumpkin, about 3–4 pounds)
Instructions
- Begin by preheating your oven to 375°F (190°C). The temperature is crucial for roasting the pumpkin to the right texture. Once it’s preheated, take your sharp knife and carefully slice the pumpkin in half from stem to base. Be cautious with this step!
- Next, use a spoon to scoop out the seeds and stringy pulp. If you’d like to roast the seeds later, don’t forget to save them! They make a delicious snack.
- Now that your pumpkin is halved and prepped, place the two halves cut side down on your prepared baking sheet. Roast the pumpkin in the oven for 45 to 50 minutes. You’ll know it’s ready when the flesh is tender.
- After roasting, carefully remove the pumpkin from the oven and let it cool for a few minutes. Scoop the soft flesh out of the rind and place it in your food processor or blender. Blend until smooth.
Notes
For a thicker puree, reduce the amount of water or add less liquid while blending.
