- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper, to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions, for garnish
Instructions
- Begin by seasoning the chicken thighs. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this spice mixture all over the chicken, ensuring each piece is evenly coated.
- Heat your skillet over medium heat and add a drizzle of oil. Once hot, place the seasoned chicken thighs in the skillet. Sear for about 3-4 minutes on each side until they develop a golden brown crust.
- In a mixing bowl, combine the BBQ sauce with honey. Stir well until blended entirely.
- In the same skillet, add the uncooked long-grain rice. Toast it for 1-2 minutes over medium heat. Next, pour in the chicken broth and half of the prepared BBQ-honey sauce mixture.
- Return the chicken thighs to the skillet, pour the remaining BBQ-honey sauce over the chicken, cover the skillet, and reduce the heat to low to simmer for about 15 minutes.
- Stir in your mixed vegetables and let it cook for an additional 5 minutes.
- Remove the pan from heat and let it sit for about 5 minutes before serving, garnished with chopped green onions.
