  • 4 medium sweet potatoes, thickly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon sesame seeds
  • 1 teaspoon smoked paprika
  • 1 tablespoon chili paste (or 1 tsp red pepper flakes)
  • Salt and pepper, to taste
  • 2 tablespoons chopped parsley or cilantro
  • Optional: Fresh lime juice for finishing

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper. Boil the sweet potato slices in a large pot of salted water for approximately 8–10 minutes, until they are tender but not falling apart. Drain and let cool slightly.
  2. Spread the cooled sweet potato slices evenly across the prepared baking tray. Use a fork or the bottom of a glass to press each slice gently to flatten without breaking.
  3. In a bowl, mix together the olive oil, maple syrup, chili paste, smoked paprika, and a pinch of salt and pepper. Use a brush to coat each smashed sweet potato slice generously with the mixture.
  4. Roast the seasoned sweet potatoes for 25–30 minutes, flipping them halfway through, aiming for crispy and browned edges.
  5. Remove from the oven, sprinkle with sesame seeds and fresh herbs, and add a squeeze of lime juice if desired. Serve warm.

Choose sweet potatoes of similar size to ensure even cooking. Don’t skip the cooling step; it makes the smashing process much easier.
