- 200g halloumi, cubed
- 2 garlic cloves, minced
- 1 tbsp honey
- 1 tbsp curry powder
- 50g mixed nuts (almonds, cashews, or walnuts), chopped
- Salt and black pepper, to taste
- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- Handful of fresh parsley or coriander, chopped
Instructions
- Preheat your oven to 200°C (390°F).
- Toss the cauliflower florets with olive oil, garlic, honey, curry powder, salt, and pepper.
- Spread on a baking tray and roast for 20-25 minutes until golden-brown.
- Pan-fry cubed halloumi until golden brown and crispy.
- Combine roasted cauliflower, halloumi, and mixed nuts; garnish with parsley or coriander.
