Ingredients

  • 200g halloumi, cubed
  • 2 garlic cloves, minced
  • 1 tbsp honey
  • 1 tbsp curry powder
  • 50g mixed nuts (almonds, cashews, or walnuts), chopped
  • Salt and black pepper, to taste
  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • Handful of fresh parsley or coriander, chopped

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Toss the cauliflower florets with olive oil, garlic, honey, curry powder, salt, and pepper.
  3. Spread on a baking tray and roast for 20-25 minutes until golden-brown.
  4. Pan-fry cubed halloumi until golden brown and crispy.
  5. Combine roasted cauliflower, halloumi, and mixed nuts; garnish with parsley or coriander.
