- 1 lb boneless, skinless chicken breasts
- ¼ cup honey
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 2 garlic cloves, minced
- Salt and pepper, to taste
- 1 cup cooked white or brown rice
- ¼ cup fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt, to taste
- 2 ripe avocados, thinly sliced
- 1 tablespoon lime juice
- Salt and pepper, to taste
Instructions
- Start by seasoning the chicken breasts with salt and pepper. Whisk together honey, lime juice, lime zest, and minced garlic in a small bowl until combined. Preheat skillet over medium heat and cook the chicken for 6–7 minutes per side until golden brown. Brush the honey-lime glaze on in the last two minutes. Let the chicken rest for five minutes before slicing.
- While the chicken rests, combine cooked rice with chopped cilantro, one tablespoon of lime juice, and a pinch of salt. Mix well.
- Slice the avocados thinly and toss with a tablespoon of lime juice, salt, and pepper.
- Assemble the stack: press rice into a round mold, layer with avocado slices, then top with honey-lime chicken. Drizzle remaining glaze over the top before serving.
Notes
For the chicken, ensure it’s cooked thoroughly to a safe internal temperature of 165°F (75°C). Use any remaining glaze to brush over stacks or serve on the side.
