Ingredients

  • 1 lb boneless, skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1 cup cooked white or brown rice
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt, to taste
  • 2 ripe avocados, thinly sliced
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Start by seasoning the chicken breasts with salt and pepper. Whisk together honey, lime juice, lime zest, and minced garlic in a small bowl until combined. Preheat skillet over medium heat and cook the chicken for 6–7 minutes per side until golden brown. Brush the honey-lime glaze on in the last two minutes. Let the chicken rest for five minutes before slicing.
  2. While the chicken rests, combine cooked rice with chopped cilantro, one tablespoon of lime juice, and a pinch of salt. Mix well.
  3. Slice the avocados thinly and toss with a tablespoon of lime juice, salt, and pepper.
  4. Assemble the stack: press rice into a round mold, layer with avocado slices, then top with honey-lime chicken. Drizzle remaining glaze over the top before serving.

Notes

For the chicken, ensure it’s cooked thoroughly to a safe internal temperature of 165°F (75°C). Use any remaining glaze to brush over stacks or serve on the side.
