  • ½ ripe avocado, sliced
  • ½ cup cooked taco-seasoned ground beef
  • ½ cup cottage cheese
  • ½ cup roasted sweet potatoes, cubed
  • For the Taco Beef:
  • ½ pound lean ground beef
  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and black pepper, to taste
  • ½ teaspoon cumin
  • Optional: fresh lime juice

Instructions

  1. Gather all your ingredients for smooth cooking.
  2. Preheat the oven to 400°F (200°C). Toss sweet potato cubes in oil, salt, and pepper, and roast them on a baking sheet for 20-25 minutes.
  3. In a skillet, cook lean ground beef over medium heat until browned, then drain excess fat. Stir in seasonings and simmer.
