- ½ ripe avocado, sliced
- ½ cup cooked taco-seasoned ground beef
- ½ cup cottage cheese
- ½ cup roasted sweet potatoes, cubed
- For the Taco Beef:
- ½ pound lean ground beef
- 1 teaspoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and black pepper, to taste
- ½ teaspoon cumin
- Optional: fresh lime juice
Instructions
- Gather all your ingredients for smooth cooking.
- Preheat the oven to 400°F (200°C). Toss sweet potato cubes in oil, salt, and pepper, and roast them on a baking sheet for 20-25 minutes.
- In a skillet, cook lean ground beef over medium heat until browned, then drain excess fat. Stir in seasonings and simmer.
- Assemble the bowl with cottage cheese on the bottom, followed by sweet potatoes and taco beef. Add sliced avocado.
- Drizzle hot honey over the assembled bowl before serving.
