Description

A stunning Italian appetizer featuring layered cherry tomatoes, creamy mozzarella, and fresh basil.


Ingredients

Scale
  • 300g cherry tomatoes, halved
  • 150g buffalo mozzarella or burrata, cubed
  • 1 tbsp extra virgin olive oil (plus more for drizzling)
  • 1 pinch caster sugar
  • Fleur de sel, to taste
  • Freshly ground black pepper, to taste
  • 6 fresh basil leaves, torn
  • Balsamic cream (optional, for garnish)

Instructions

  1. Preheat your oven to 150°C (300°F). Line a tray with parchment paper and arrange the halved cherry tomatoes cut side up.
  2. Drizzle the tomato halves with olive oil and sprinkle with caster sugar, fleur de sel, and black pepper. Roast for 45 to 60 minutes until caramelized.
  3. Cut the buffalo mozzarella into bite-sized chunks and drizzle with olive oil and fleur de sel.
  4. Spoon mozzarella into the bottom of each glass and drizzle with olive oil.
  5. Add roasted tomato halves and torn basil leaves, layering as desired.
  6. Chill in the refrigerator for 15 to 30 minutes before serving.
