A stunning Italian appetizer featuring layered cherry tomatoes, creamy mozzarella, and fresh basil.
Ingredients

- 300g cherry tomatoes, halved
- 150g buffalo mozzarella or burrata, cubed
- 1 tbsp extra virgin olive oil (plus more for drizzling)
- 1 pinch caster sugar
- Fleur de sel, to taste
- Freshly ground black pepper, to taste
- 6 fresh basil leaves, torn
- Balsamic cream (optional, for garnish)
Instructions
- Preheat your oven to 150°C (300°F). Line a tray with parchment paper and arrange the halved cherry tomatoes cut side up.
- Drizzle the tomato halves with olive oil and sprinkle with caster sugar, fleur de sel, and black pepper. Roast for 45 to 60 minutes until caramelized.
- Cut the buffalo mozzarella into bite-sized chunks and drizzle with olive oil and fleur de sel.
- Spoon mozzarella into the bottom of each glass and drizzle with olive oil.
- Add roasted tomato halves and torn basil leaves, layering as desired.
- Chill in the refrigerator for 15 to 30 minutes before serving.
