Instructions
- Begin by combining the whole-milk ricotta cheese and melted dark chocolate in a mixing bowl. Stir the mixture thoroughly until it becomes smooth and well incorporated.
- Once your chocolate and ricotta are fully blended, cover the bowl with plastic wrap and place it in the refrigerator for about 30 minutes until it becomes firm enough to shape.
- After the mixture has chilled, take it out of the refrigerator and give it a quick stir. Use a spoon or small ice cream scoop to scoop out portions and roll them into balls.
- Spread the chopped almonds on a plate and roll each truffle in the almonds to coat evenly.
